Harvest of this precious garlic flower is done as soon as mid-June when the flower is still at bud stage. When fresh, the garlic flower has an onion taste slightly hot; mainly used in salads or cooked in sautés. Minced and bottled with oil, it takes a delicious taste, a bit sweet and very different from the fresh garlic flower taste, turning into a great seasoning that enhances all dishes.
