The mild and lightly aniseed flavored taste of the leaves goes well with smoked fish, soup made with cream and butter sauces. The chervil is used like parsley and can replace it. Harvest the leaves before blooming time, that`s when they are the most tastefully; it`s better to use them fresh and it is best to add during the last few moments of cooking for the best flavor. Needs a fertile, fresh and well drained soil.
