Its bitter, musky, lemon flavor is used to spice up Mexican food. It enhances flavour of tamales ( masa based dishes), black beans, soups, pork dishes, etc. The Aztecs used epazote medicinally to treat internal parasites. We eat the fresh leaves that are picked as needed; they can also be used dried, that way they have a milder taste. Poor soil, well drained.
